El Mariachi was born from a simple idea: to bring the soul of Mexican street food to Fredericton, infused with the warmth and quality that define our culture. For Carlos Alvarez, cooking is more than a profession, it’s a calling.

After two decades of honing his craft in the restaurant industry, Carlos brought his dream to life in 2022. El Mariachi is his love letter to Mexico – where the scent of sizzling carne asada fills the air, the sound of laughter echoes through the night, and every meal is a celebration.
